Wholefood Date Logs – perfect for school lunches

2 cups desiccated coconut (finely shredded dried coconut)

12 medjool dates, pip removed

1 teaspoon vanilla

A pinch of salt

Apricot%2520Date%2520Coconut%2520Logs%25202_thumb%255B1%255DPlace all of the ingredients into your blender or food processor. Blend thoroughly, it may take a little while for the coconut to break down and the mixture to come together.Roll the mixture into balls or little logs and refrigerate to set.
